Zucchini Squash Fries

  1. Cut zucchini and squash into 1/4 inch thick pieces (think french fries). I like to do this by cutting them in half lengthwise, then across the width. With the vegetables quartered, it makes it much easier to get the right size fries.
  2. Place fries in a 1 gallon sealable bag. Add olive oil. Close and shake. At this point, your fries should be evenly coated in olive oil. Add more olive oil a teaspoon at a time until you are happy with the coating.
  3. Add parmesan and ranch dressing mix to the bag. Make sure all fries are evenly coated.
  4. Add breadcrumbs and repeat.
  5. Place fries in a single layer on a lined baking sheet and place in 400 degree oven for 30 minutes, turning over once half way through.
  6. Serve with marinara or ranch as a dipping sauce.
