Zucchini Salsa

Ingredients
- 2 cups zucchini, diced
- 1 lb tomatoes, chopped
- 1 cup purple onion, finely chopped
- 1 tablespoon green curry paste
- 1 teaspoon ground ginger
- 1 1⁄2 teaspoons yellow mustard
- 1 cup yellow zucchini, diced
- 1 jalapeno, seeded and finely chopped
Directions
- In a medium bowl combine all ingredients. Refrigerate and let sit for at least two hours.
- Serve when ready (it is especially good during bbq season, or when you feel like having something spicy).
