Zucchini Rounds

Ingredients
- 2 cups grated zucchini
- 2 eggs, slightly beaten
- 1⁄4 grated parmesan cheese
- 1⁄3 cup flour
- 1 teaspoon sugar
- 1 tablespoon milk
- 1⁄2 teaspoon baking powder
- salt and pepper
- butter, for frying
Directions
- Mix all ingredients a large bowl. Heat up a skillet over medium-high heat, melt butter in skillet. Drop zucchini mixture into skillet by the spoonful, flattening slightly. Cook until crisp, flip, and repeat on the other side.
