Zucchini Pizza Crust

Ingredients
- 2 medium zucchini, shredded
- salt
- 2 eggs
- 1 cup reduced-fat mozzarella cheese, shredded
- 2 garlic cloves, minced
- 1⁄4 teaspoon fresh ground black pepper
- 2 tomatoes, sliced
- 1 green onion, chopped
- 30 g goat cheese, crumbled
- 2 tablespoons fresh basil, torn
Directions
- For the zucchini crust: shred two medium zucchini. Salt and drain at least 15 minutes. Rinse and pat dry. Mix with two eggs, 1 cup shredded reduced fat mozzarella, 2 cloves minced garlic, and fresh ground black pepper. Spread on a greased baking sheet (I used a pizza stone) and bake at 375F for 12 to 15 minutes, until light brown.
- I topped with sliced tomatoes, green onions, and crumbled herbed goat cheese before broiling for a few minutes. Then I added a few fresh basil leaves.
