Zucchini or Yellow Squash Patties and Dressing

Ingredients

  • 2  cups zucchini or 2  cups  yellow squash, peeled, grated
  • 1  teaspoon salt
  • 2  tablespoons sugar
  • 1  egg
  • 12 cup flour
  • 1  small onion, grated
  • Dressing

  • 12 cup onion, chopped
  • 12 cup green pepper, chopped
  • 12 cup celery, chopped
  • 12 cup butter
  • 5  cups  cornbread, crumbled
  • 2  cups milk
  • 1 (10 3/4ounce) can  cream of chicken soup, undiluted
  • 3  cups  yellow squash, cooked, drained
  • 1  teaspoon salt
  • 14 teaspoon pepper

Directions

  1. Mix all non-dressing ingredients well and drop by teaspoon into hot oil.
  2. Fry until golden brown.
  3. YELLOW SQUASH DRESSING:
  4. Saute onion, pepper and celery in butter until tender.
  5. Add to cornbread and stir well.
  6. Stir in remaining ingredients mixing well.
  7. Pour into a greased 13 x 9 x 2-inch baking dish.
  8. Bake at 400 degrees for 50 minutes or until lightly browned.
