Zucchini Onion Pie

Ingredients
- 3 eggs
- 1 cup parmesan cheese, grated
- 1⁄2 cup canola oil
- 1 tablespoon fresh parsley, minced
- 1 garlic clove, minced
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 3 cups zucchini, sliced
- 1 cup baking mix, bisquick
- 1 small onion, chopped
Directions
- In large bowl whisk together first seven ingredients.
- Stir in zucchini and baking mix.
- Pour into greased 9" deep dish pie plate.
- Bake at 350 for 25-30 minutes or until lightly browned.
