Ingredients
- 3 eggs
- 1 cup oil
- 2 1⁄2 cups sugar
- 2 -3 cups zucchini (peeled & grated)
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons cinnamon
- 1⁄2 cup chopped nuts
Directions
- Beat eggs.
- Add oil, sugar, zucchini, and vanilla.
- Mix lightly but well.
- Add other ingredients.
- Beat well.
- Bake in greased loaf pans at 325 for 1 hour.
- Yields 2 loaves.
- Freezes well.
