Zucchini Nut Bread

Ingredients
- 3 eggs
- 1 teaspoon salt
- 1 cup salad oil
- 1 teaspoon baking soda
- 2 cups sugar
- 1 tablespoon cinnamon
- 1 cup grated zucchini
- 1⁄2 teaspoon baking powder
- 3 teaspoons vanilla
- 1⁄2 cup nuts
- 3 cups flour
Directions
- Mix together eggs, oil and sugar.
- Add zucchini and vanilla.
- Sift together dry ingredients.
- Add slowly to zucchini mixture.
- Stir in nuts.
- Pour into greased loaf pans (2).
- Bake at 325 degrees F for 1 hour.
