Zucchini Linguine

Ingredients

  • 2  8 inch long zucchini, ends trimmed
  • 2  tablespoons olive oil
  • 12  lemon, juice of
  •  salt and pepper

Directions

  1. Julienne just the outsides of each zucchini lengthwise using a mandoline or by hand.
  2. Discard seed core.
  3. Heat oil in a large nonstick skillet over medium-high heat.
  4. Add zucchini and sauté 3 minutes, or until soft.
  5. Season with lemon juice, salt and pepper.
