Ingredients
- 4 eggs
- 2 cups shredded zucchini
- 1 potato (shredded)
- 1 medium onion (chopped)
- 1 carrot (shredded)
- 1⁄4 cup bell pepper (green, red, or yellow(chopped)
- 1⁄4 cup chopped celery
- 1⁄2 cup parmesan cheese
- 2 garlic cloves (minced)
- fresh parsley (chopped)
- 4 tablespoons wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- salt and pepper
Directions
- Mix all the ingrediants in a bowl.
- Over medium heat in a greased pan drop tablespoons of batter on to pan to make little circles.
- When the top starts to look dry flip it over.
