Zucchini Chocolate Chip Cookies

Yields: 24 cookies
Ingredients
- 1 egg, beaten
- 1⁄2 cup butter, softened
- 1⁄2 cup brown sugar
- 1⁄3 cup honey
- 1 tablespoon vanilla extract
- 1 cup white flour
- 1 cup whole wheat flour
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1 cup zucchini, finely shredded
- 12 ounces chocolate chips
Directions
- Preheat oven to 350 degrees F.
- Combine the first five ingredients in a large bowl.
- In a smaller bowl, combine the next six ingredients. Slowly add to wet ingredients, mixing but just to get everything combined.
- Stir the last two ingredients into the large bowl. Mix well. Drop by spoonful.
- onto greased baking sheet, and flatten with the back of a spoon.
- Bake 10 to 15 minutes. Transfer from pan to wire rack for cooling.
