Zucchini Casserole

Ingredients
- 3 cups raw zucchini
- 1 carrot, grated
- 1 onion, chopped
- 1 (10 1/2ounce) can cream of chicken soup
- 1 cup sour cream
- 6 ounces chicken stove top stuffing mix
- 1⁄2 cup butter
Directions
- Chop zucchini. Cook zucchini until just tender, drain. Combine carrot, onion, soup, sour cream. Fold in zucchini. Melt butter. Combine stuffing mix and the butter.
- Bake at 375 for 20-30 minutes.
