Ingredients
- 2 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 tablespoon vanilla
- 2 cups zucchini, grated
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 teaspoons baking powder
- 1 tablespoon cinnamon
- 1 cup nuts, chopped
- powdered sugar
Directions
- Preheat oven to 350°.
- Mix the eggs, oil and sugar in a large mixing bowl.
- Fold in the vanilla and zucchini.
- Add the flour, salt, baking soda, baking powder and cinnamon; mix well. Stir in nuts.
- Pout into 2 greased loaf pans; bake for 1 hour.
- Dust with powdered sugar.
