- Preheat oven to 325F.
- grease and flour 2 9x5 bread pans.
- Beat eggs til foamy.
- beat in oil, sugar, vanilla and zucchini, set aside.
- In a separate bowl: Combine the flour, cinnamon, salt, baking soda, baking powder and nutmeg.
- combine all ingredients and add in walnuts or raisins.
- pour equally into the two bread pans.
- bake for 60-70 minutes.
