Zucchini Bread

Just the right amount of spices! This is a breakfast favorite around my house.

  1. Preheat oven to 325F.
  2. grease and flour 2 9x5 bread pans.
  3. Beat eggs til foamy.
  4. beat in oil, sugar, vanilla and zucchini, set aside.
  5. In a separate bowl: Combine the flour, cinnamon, salt, baking soda, baking powder and nutmeg.
  6. combine all ingredients and add in walnuts or raisins.
  7. pour equally into the two bread pans.
  8. bake for 60-70 minutes.
  9. enjoy!
