Zucchini Bread

Yields: 2 loaves
Ingredients
- 3 large eggs
- 3⁄4 cup sugar
- 1 cup vegetable oil
- 2 cups raw peeled, grated zucchini
- 1 tablespoon vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons cinnamon
- 1 cup coarsely chopped nuts
Directions
- Combine first 5 ingredients in a mixing bowl and beat well.
- Sift together dry ingredients then add to zucchini mixture and stir until blended. Add nuts
- Pour into 2 greased 8" bread pans and bake for 1 hour in a 350 degree oven.
