Zucchini Bread

Ingredients
- 3 eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 2 cups shredded unpeeled zucchini
- 1 cup chopped nuts, your choice
- 1 teaspoon pure vanilla extract
Directions
- Preheat oven to 350 degrees F. Lightly grease and flour two 9 by 5-inch loaf pans.
- In a large bowl cream the eggs, sugar and vegetable oil until light and fluffy. Mix in flour, salt, cinnamon, baking powder, and baking soda. Add nutmeg, zucchini, nuts and vanilla extract; stir until well blended.
- Pour batter into prepared loaf pans and bake 55 to 60 mins or until a toothpick inserted in center comes out clean.
- Remove from oven and cool on wire racks 10 mins; remove from pans. Cool completely before slicing.
