Zucchini Bread

Ingredients
- 3 eggs
- 1 cup oil
- 2 cups brown sugar
- 2 cups zucchini, grated, raw, unpeeled
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon vanilla
- 1 cup chopped nuts
Directions
- Beat 3 eggs. Add oil, brown sugar and zucchini. Mix well. Stir in flour, salt and baking soda. Fold in vanilla and nuts. Pour into 2 greased and floured loaf pans (9x5x3). Bake in 350* oven 1 hour. Remove from pans and cool on rack.
