Zucchini Bread

Ingredients
- 3 eggs
- 1 cup oil
- 1 1⁄2 cups sugar
- 2 cups zucchini (peeled and grated)
- 3 teaspoons vanilla
- 2 cups flour
- 2 teaspoons cinnamon
- 1⁄4 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1⁄2 cup nuts (optional)
Directions
- Beat eggs until light and foamy, add oil, surgar, zucchini and vanilla. Add flour, salt, soda, baking powder and cinnamon. Mix until blended. Add nuts. Divide into 2 loaf pans. Bake 325 degrees for 1 hour.
