Zucchini Bread

Ingredients
- 4 cups shredded zucchini
- 3 cups all-purpose flour
- 2 1⁄2 cups sugar
- 1 1⁄4 cups vegetable oil
- 4 beaten eggs
- 1 tablespoon vanilla, plus
- 1 teaspoon vanilla
- 1 tablespoon ground cinnamon
- 1 1⁄2 teaspoons salt
- 1 1⁄2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1 cup nuts (optional)
Directions
- Preheat oven to 325.
- Grease generously bottoms of 2 loaf pans.
- Blend all ingredients on low 1 minute.
- Beat at medium speed 1 minute.
- Pour into pans.
- Bake 45-50 minutes until toothpick comes out clean.
- Cool and Enjoy!
