Ingredients
Bar Ingredients
- 3⁄4 cup butter, softened
- 1⁄2 cup packed brown sugar
- 1⁄2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3⁄4 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 2 cups shredded zucchini
- 1 cup shredded coconut
- 3⁄4 cup chopped walnuts
Frosting Ingredients
- 1 cup confectioners' sugar
- 2 1⁄2 tablespoons milk
- 1 1⁄2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
Directions
- Preheat oven to 350 degrees.
- Cream butter until light and fluffy and beat in sugars.
- Add eggs one at a time, and then mix in vanilla.
- Stir in flour and baking powder.
- Mix in zucchini, coconut and nuts.
- Spread evenly in a greased 15 x 10 x 1" baking pan.
- Bake 30-35 minutes.
- While bars are baking mix together the frosting ingredients.
- When bars are done, let cool for 10 minutes, and then spread with frosting while still warm.
- Cut into squares.
