Zippy Prune Whip

This recipe was on a 1960 calendar..sounds good although I have not made it yet..

Ingredients

  • 2  large  egg whites
  • 13 cup sugar
  • 2  tablespoons  frozen lemonade concentrate
  • 1 12 cups  strained prunes
  •  heavy cream, whipped

Directions

  1. mix together egg whites, sugar and lemonade concentrate in top of double boiler.cook over boiling water, beating constantly with electric mixer until mixture fluffs up and holds it shape.about 4-5 minutes.
  2. remove from heat source, fold in prunes.col.spoon into sherbert glasses --
  3. top with whipped cream.
