Zippy Mango Salsa

Great salsa for corn chips or for chicken or fish. The Jalapeno pepper adds some heat, and the mango adds some sweet flavor. A very colorful dish to serve. I got the recipe from someone who brought it to a tennis group lunch. She served it with tortilla chips and it tasted delicious and looked beautiful. Show more

Serves: 6-8

Yields: 2 cups

Ingredients

  • 1  mango, peeled, and diced
  • 1  red pepper, diced
  • 1  cucumber, seeded, peeled and diced small
  • 1  tomatoes, diced (I used Campari)
  • 12 cup red onion, diced
  • 1  jalapeno pepper, seeded and chopped very fine
  •  juice of one lemon and one lime
  •  salt

Directions

  1. Clean, dice or chop all the ingredients and put in a mixing bowl. Juice the lemon and lime and toss. Chill. Serve with tortilla chips or with fish or chicken as a relish.
