Zesty Gazpacho Salad

Very refreshing salad. Crisp and flavorful.

Ingredients

• 2  medium zucchini, chopped
• 2  medium tomatoes, chopped
• 1  avocado, chopped
• 1  cup frozen corn kernels
• 1⁄2 cup  thinley sliced green onion
• 1⁄2 cup  picante sauce
• 2  tablespoons  minced fresh parsley
• 2  tablespoons lemon juice
• 1  tablespoon  vegetable oil
• 3⁄4 teaspoon  garlic salt
• 1⁄4 teaspoon cumin

Directions

1. In large bowl, combine the first 5 ingredients.
2. In small bowl, mix remaining ingredients; mix well.
3. Pour over vegetables; toss to coat.
4. Cover and refrigerate.
