Zesty Chicken Breast With Peanut Sauce

This is another one of those peanut butter recipes from Jif.com. I love these types of peanut sauces. Very often similar flavors are used in Thai recipes. Use sugar-free peanut butter if you think it is too sweet as is. Show more

  1. Wash, trim and pound chicken to 1/4 inch thickness.
  2. Combine chicken and marinade ingredients in a large plastic bag and let marinate for 1 hour or overnight in the refrigerator.
  3. Combine peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic and cayenne in a saucepan over medium heat, stirring constantly for 15 minutes or until thickened.
  4. Whisk in stock and cream and cook one more minute.
  5. Remove from heat.
  6. Preheat grill and place chicken on HOT grill.
  7. Cook for about 5 minutes on each side (only turn once).
  8. Serve hot with peanut sauce and garnish with cilantro.
