Serves: 2-4

Ingredients

  • 1 (20 ounce) package  Simply Potatoes Homestyle Slices
  • 1  large onion, chopped
  • 1  garlic clove (chopped or crushed)
  • 2  tomatoes, chopped
  • 3  eggs
  •  salt & pepper

Directions

  1. Place Simply Potatoes Homestyle Slices over heated oil in a sturdy based frying pan. Try not to overlap the slices too much. Cook until lightly browned on the bottom and flip over to cook the other side. Add the chopped onion to the potatoes and allow to cook until the onions are soft and have a light golden colour. Add chopped or crushed garlic, along with the chopped tomato and cook until the tomato has cooked down. Add salt and pepper to taste. Break three eggs into the cooked vegetable mixture, and lightly stir, taking care not to break the potato. When egg has just set, remove from the pan and serve on a plate, or place between two slices of bread and have a Muck Sandwich! Delicious!
