Zabaglione
Directions
- In a large saucepan or double boiler, bring water to just about a boil, do not let it boil! Reduce heat to medium or low to maintain the simmer.
- On the top of the double boiler or in a heatproof bowl, combine egg yolks and sugar and whisk to combine.
- Set on top of barely boiling water and whisk constantly. After about 5 minutes, add Marsala wine.
- Whisk constantly until mixture becomes thicker and increases in volume, about another 8 minutes.KEEP WHISKING! (you could use a hand mixer to do this if that is easier).
- Serve over fresh Strawberries in Martini glasses or any other large mouthed glass.(You could use any type of berries but strawberries are traditonal, romantic and the best tasting). Serve immediately.
