Yummy Vanilla Almond Swirl "cheese" Cake

Ingredients
CRUST
- 2 cups brown rice flour
- 1⁄3 cup carob powder
- 1⁄2 cup safflower oil
- 1⁄2 cup maple syrup
FILLING
- 500 g firm silken tofu
- 3⁄4 cup maple syrup
- 1⁄4 cup almond butter
- 1 orange, juice of
- 1⁄3 cup arrowroot
- 1 teaspoon pure vanilla extract
TOPPING
- 1 teaspoon almond butter
- 1⁄2 orange, rind of, grated
- 1⁄4 cup carob powder
- 2 tablespoons maple syrup
Directions
- CRUST.
- Mix all ingredients together well and press into a well oiled 8" spring form pan.
- FILLING.
- Process all ingredients in a food processor until smooth. Pour mixture onto crust.
- TOPPING.
- Drizzle the topping in lines or cicles accross the top of the cake, use a toothpick to drag lines through the top to create an interesting effect.
- Bake at 350 degrees for 25-30 minutes, or until filling feels slightly firm to the touch.
- Cool Completely before slicing and serving.
