Yummy Poached Lemony Salmon

Ingredients
- 1 lb salmon fillet
- 1 pinch oregano
- salt and pepper
- 1 tablespoon olive oil
- 1⁄2 red onion, minced
- 1 teaspoon diced garlic
- 1⁄4 cup diced carrot
- 1 pinch brown sugar
- 1⁄2 cup chicken broth
- 1 lemon, juice and zest of
- 3 -4 peppercorns
- 1⁄2 cup white wine
- 1 tablespoon capers
Directions
- Season fillet with oregano, salt and pepper.
- Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.
- De-glaze with chicken broth, lemon juice and rind and white wine.
- Place peppercorns, salmon on top cover and simmer over low flame for 7 minutes. Top with capers and serve.
