Yummy Hot Chicken Sandwiches

Yields: 4 sandwiches
Ingredients
- 1 lb cooked chicken, shredded
- 4 slices deli ham
- 4 sandwich buns
- 1⁄2 small onion, sliced
- 8 ounces queso fresco, sliced thin
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- seasoning salt, I use Sylvia's Soulful Seasoning
Directions
- First, slice your fresh sandwich rolls in half and place a slice of ham on each bottom half. (I purchased fresh bakery rolls and that really made this sandwich special).
- Place the shredded, cooked chicken on top of the ham. Sprinkle the top of the chicken with some seasoned salt (I use Sylvia's Soulful Seasoning).
- Then, place the Queso cheese on top and lastly the sliced onions.
- Place under a LOW broil in your oven until the cheese melts. I broil the top half of the buns also so that they're nice and warm. Watch them closely so you don't burn the edges!
- Make your dijon sauce by combining the mayo with the dijon mustard. Spread this onto the top half of your roll and assemble your sandwiches.
- Gobble them up! They're yummy!
