Ingredients
for brownies
- 1 (20 ounce) package brownie mix
- 1⁄2 cup canola oil
- 2 eggs
- 1⁄2 teaspoon coconut extract
for Filling
- 1 (8 ounce) package cream cheese, softened
- 2 eggs
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
- 3 3⁄4 cups confectioners' sugar
- 1 cup flaked coconut
Directions
- Brownies:.
- preheat oven to 350 degrees.
- beat brownie mix, oil, eggs and extract on medium until well blended.
- set aside 1 cup for topping.
- spread batter into greased 13x9 in baking pan and bake 12 minutes.
- Filling:.
- in a small bowl, beat cream cheese, eggs, extracts and sugar until smooth.
- fold in coconut flakes.
- after brownies are baked for 12 minutes, spread cream cheese mixture over brownies in pan.
- drop remaining cup of brownie batter over filling by teaspoons.
- bake additional 45 minutes.
- cool and enjoy!
