Yummy Berry Muffins

This recipe is so good and easy too. I love to have them on Saturday mornings with my coffee!

Ready In: 30 mins

Yields: 12 muffins

Ingredients

  • 2  cups all-purpose flour (I use 1 cup white and 1 cup wheat)
  • 34 cup sugar
  • 2 12 teaspoons baking powder
  • 14 teaspoon baking soda
  • 14 teaspoon salt
  • 1  cup milk
  • 12 cup  vegetable oil
  • 2  eggs
  • 1 12 cups berries (any type you want or a combination...I like a blueberry and raspberry combination. Fresh is best but)

Directions

  1. Mix dry ingredients together.
  2. In a separate bowl, mix milk, oil, and eggs.
  3. Stir into dry ingredients.
  4. Mix until just blended.
  5. Don't mix until smooth, batter should be a little lumpy.
  6. Fold in berries.
  7. Divide mixture evenly into greased large muffin tins.
  8. Bake in a preheated 400 degree oven 15-18 minutes or until toothpick comes out clean.
