Yellow Split Pea Soup

Ingredients
- 1 (1 lb) package of goya yellow split peas
- 4 (14 ounce) cans vegetable broth
- 1 small onion, chopped
- 1 cup carrot, chopped
- 1 cup celery, chopped
- 1 teaspoon salt
- 1⁄2 teaspoon fresh ground pepper
Directions
- Rinse peas - no need for soaking. Combine all ingredients in a large saucepan. Bring to a boil. Lower temperature and simmer for 2-3 hours, or until peas and vegetables are tender, adding water if necessary or desired.
