Yellow Rice

Serves: 6-8
Ingredients
- 3 cups uncooked rice
- 1 medium white onion
- 1⁄2 garlic
- 4 cups chicken broth
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon salt (If Broth is salt free)
- 1⁄4 teaspoon black pepper (to taste)
- 2 dashes saffron (It's more for color) (optional)
- 1 teaspoon tomato sauce (For color)
- 1⁄2 cup butter (One stick)
- 1⁄2 cup cilantro (optional)
- 1 cup peas (optional)
Directions
- In a blender, add all ingridence except for Rice and peas. Blend.
- In a small pot, bring mixture to a boil.
- Add Rice.
- Add Peas.
- Simmer on low for 15 minutes.
- Do not Stir! This will make it mushy.
