Yellow Beets With Orange Juice and Sherry Vinegar

Ingredients
- 1 lb yellow beet
- 2 tablespoons sherry vinegar
- 2 tablespoons orange juice concentrate (undiluted)
- salt and pepper
Directions
- Cook beets until tender.
- Cool, peel and slice beets.
- Toss with sherry vinegar and orange juice concentrate. Season to taste with salt and pepper.
