Ingredients
- 1 lb chicken breast (boneless, skinless)
- 2 bunches scallions, trimmed
- 1⁄4 cup sake or 1⁄4 cup dry white wine
- 1⁄4 cup soy sauce
- 1 tablespoon sugar
- 1 teaspoon grated fresh ginger
Directions
- Prepare hot fire. Cut chicken into 1 ½ inch cubes.
- Cut scallions into 2 inch lengths, with some green tops.
- Thread 3 or 4 pieces of chicken onto 12 skewers, alternating with pieces of scallion.
- In a small bowl, mix together remaining ingredients.
- Place skewers on an oiled grill and brush with soy mixture, turning occasionally, until chicken is white through, 5-7 minutes.
