X-Treme Kiddo Cookies

So named because I feel a bit extreme as I attempt to make reasonably healthy cookies for kids :). I have no idea how long these will store...will update if I get a chance to find out! BTW, I used yellow squash for the zucchini b/c DS will reject anything in which he can pick out green zucchini. The finished product showed no evidence of vegetables! Show more

Directions

  1. Preheat oven to 375^.
  2. Cream Smart Balance and sugars.
  3. Add vanilla and egg, mix again.
  4. Add dry ingredients and mix.
  5. Fold in chips and zucchini.
  6. Drop by even tablespoons onto an ungreased pan.
  7. Bake 10-11 minutes.
