Ingredients
- 2 large potatoes, cut into thin strips
- 2 large egg whites
- 3⁄4 tablespoon ground cumin
- 1⁄2 teaspoon table salt
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon black pepper
- 1 lb lean ground turkey
- 1⁄2 medium red onion, chopped
- 1 large egg, beaten
- 2 tablespoons parsley, chopped
- 1 garlic clove, minced
- 1⁄2 teaspoon ground tarragon
- 1⁄2 teaspoon table salt
- 1⁄2 teaspoon black pepper
- 4 medium hard rolls, high-fiber, 2 oz each
Directions
- Preheat oven to 450. Coat a nonstick baking sheet and broiler rack with cooking spray.
- In a large bowl, combine potatoes, egg whites, cumin, salt, chili powder, and pepper; toss to coat. Transfer to baking sheet.
- Bake until potatoes are barely tender, about 15 minutes.
- Meanwhile, in a large bowl lightly combine turkey, onion, egg, parsley, garlic, tarragon, salt and pepper. Form into 4 burgers.
- Increase oven temperature to broil. Broil fries until crispy, about 10 minutes. At the same time, broil burgers till brown, about 5 minutes per side.
- Place on rolls and serve immediately.
