Ingredients
- 1⁄2 cup onion, chopped
- 1 cup carrot, chopped
- 1⁄2 cup celery, chopped
- 2 garlic cloves, minced
- 2 cups fat free chicken broth
- 1 (14 1/2ounce) can diced tomatoes with jalapenos, undrained
- 1 (11 ounce) can vegetable juice, V-8
- 1 tablespoon tomato paste
- 1 cup canned green beans, drained
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon dried oregano
- 1⁄4 teaspoon salt
Directions
- Spray a medium saucepan with non-stick cooking spray.
- Add onion, carrots, celery, and garlic and saute for 5 minutes.
- Add chicken broth, bring to a boil. Reduce heat and simmer covered for 10 minutes.
- Add remaining ingredients and simmer for 10 more minutes.
