Wong's Chef Salad

We ate these salads by the truckload when we were in HS. Wong's is a restaurant on Naha Naval Air Station on Okinawa. The best salads ever! This salad will serve a big family and of course, just decrease or increase the ingredients to suit your taste.

• Yields: 1 salad

Ingredients

• 4  cups iceberg lettuce, chopped
• 4  cups romaine lettuce, chopped
• 1  carrot, sliced long and dropped into ice water for curls
• 1  small green pepper, julienned
• 1  red onion, sliced into rings
• 2  scallions, julienned
• 1  pint cherry tomatoes, halved
• 1  cucumber, sliced (if it's waxy just peel the skin off)
• 1⁄3 lb swiss cheese, julienned
• 1⁄3 lb cheese, American or 1⁄3 lb cheddar cheese, julienned
• 1⁄3 lb roast beef, thinly sliced and rolled
• 1⁄3 lb ham, thinly sliced and rolled
• 1⁄3 lb turkey, thinly sliced and rolled
• 6  hard-cooked eggs, sliced
• 1  cup  salad dressing (Russian or 1,000 Isalnd dressing was traditional)

Directions

1. Toss the lettuces together and put into a big bowl. Mix in the tomatoes and toss gently.
2. Arrange the rest of ingredients on top of the salad and pass the dressing.
