Wolfgang Puck's House Salad Dressing

Ingredients
- 3 tablespoons balsamic vinegar
- 1 tablespoon sherry wine vinegar or 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1 small shallot, minced
- 1⁄2 teaspoon fresh thyme leave, minced
- 1⁄2 cup extra virgin olive oil
- 1⁄3 cup walnut oil
- 1⁄4 teaspoon kosher salt
- 1⁄8 teaspoon white pepper
Directions
- Whisk together first five ingredients.
- Slowly whisk in oil.
- Season with salt and pepper.
