Winter Vegetable Medley

Ingredients

  • 12 lb fresh Brussels sprout, halved
  • 12 lb parsnip, peeled and cut into 1/2 inch chunks
  • 12 lb  baby carrots
  • 1  medium sweet potato, peeled and cut into 1/2 inch chunks
  • 2  medium  red potatoes, cut into 1/2 inch chunks
  • 2  medium white potatoes, peeled and cut into 1/2 inch chunks
  • 12 cup butter or 12 cup margarine, melted
  • 1 12 teaspoons rubbed sage
  • 3  cloves garlic, minced
  •  salt and pepper

Directions

  1. Place the first 6 ingredients in a greased 13x9 inch baking dish.
  2. In a bowl, mix together the butter, sage, sage, garlic, salt, and pepper; drizzle over the vegetables.
  3. Cover and bake at 375 degrees for 40-50 minutes or until tender.
