Winter Vegetable Curry With Lentils

Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 tablespoons curry powder
- 1⁄4 teaspoon ground ginger
- 1 1⁄2 lbs sweet potatoes, peeled and diced
- 1 head cauliflower, separated into florets
- 1 cup brown lentils, rinsed and drained
- 2 (15 ounce) cans diced tomatoes, with their juice
- 1 1⁄2 cups water
- 1 teaspoon kosher salt
Directions
- In a large pot, heat the oil over medium heat; add in onion; stir/saute until softened, about 5 minutes.
- Add in the curry powder and ginger; cook/stir constantly for 1 minute.
- Add in sweet potato, cauliflower, lentils, tomatoes and their juices, water, and salt.
- Bring to a boil; decrease heat, cover, and simmer for about 30 minutes, until the potatoes are tender.
