Winter Spinach " Pesto" (Vegan)

Serves: 6-9
Yields: 2-3 cups of pesto
Ingredients
- 2 cups spinach
- 1⁄3-1⁄2 red bell pepper
- 1 tablespoon dried basil (fresh would be better)
- 1⁄2 tablespoon dried parsley (fresh would be better)
- 1⁄4 cup canned chick-peas (more for on top if you want)
- 1⁄4 cup coconut milk
- 1⁄4 cup walnuts
- black pepper
Directions
- Add ingredients into a food processor or blender.
- Blend until smooth.
- Put over pasta and top with chickpeas if you want.
