Winter Pear and Apricot Jam

Yields: 6 cups

Ingredients

  • 12 cup  finely chopped  dried apricot
  • 1 34 cups water
  • 2  cups  finely chopped cored peeled pears
  • 2  teaspoons lemon juice
  • 1 (1 ounce) box  powdered fruit pectin
  • 4 12 cups sugar

Directions

  1. Soak apricots in water for 4 hours or overnight.
  2. Pour apricots and liquid into saucepan. Add pears, lemon juice and pectin.
  3. Bring to a full boil over high heat, stirring constantly.
  4. Add sugar, return to a full boil and boil hard for 1 minute, stirring constantly. Remove from heat.
  5. ladle into jars and process in hot water bath for 10 minutes.
