Winter Meatloaf

I found this recipe in an issue of Prairies North (winter 2009). This is a hearty Canadian meatloaf and a true comfort food. Just the thing on a cold and windy winter's night that warms the body and soul. Serve this with some good old fashioned mashed potatoes and some baby carrots with butter. Show more

  1. Break the bread into a large bowl.
  2. In a blender or food processor, combine the milk, egg, onion, thyme, and vinegar.
  3. Pour over the bread and mix well. Allow enough time for the bread to soak up the milk.
  4. Add meats, dill, salt and pepper, mixing throughly.
  5. Pat the mixture into a loaf pan.
  6. Stir together the tomato paste, honey, mustard, and coriander. Spread over meat loaf.
  7. Bake at 350* for 1 hour.
  8. For a brown crust, turn on the broiler at the end of cooking.
