Wild Rice and Turkey Soup

Yields: 6 cups
Ingredients
- 1 cup wild rice
- 2 leeks, sliced
- 1 tablespoon olive oil
- 4 cups chicken broth
- 15 ounces canned corn, drained
- 2 cups diced cooked turkey
Directions
- Cook wild rice in 3 cups water. Boil for 45-60 minutes. Set aside.
- Sautee leeks in olive oil.
- Add broth and bring to a boil.
- Add rice, corn and turkey.
- Warm and serve.
