Wild Rice and Mushrooms (Lower Fat/Calorie)

Serves: 4-6
Ingredients
- 1 box uncle ben's long grain and wild rice blend
- 1 cup white rice (Brown Rice Works Well Also)
- 1 lb sausage (Pork or Turkey, Mild or Hot)
- 1⁄2 cup onion (diced)
- 1 tablespoon olive oil
- 1⁄2 cup sliced mushrooms (canned or fresh, it doesn't matter-if using fresh, saute with the onions from the beginning)
- salt and pepper (To Taste)
Directions
- Prepare wild rice as directed on box (it will take 35-40 to cook).
- While wild rice is cooking, saute onions in olive oil until almost tender
- Add sausage and mushrooms to onions, browning sausage.
- Cook white rice as directed on box.
- When both rice mixtures are fully cooked, mix all ingredients together.
- Salt and pepper to taste.
