Wild Mushroom Rice Pilaf

Ingredients
- 1 cup rice
- 2 cups mushroom stock (see below)
- 3 cups button mushrooms
- 1⁄2 cup shiitake mushroom
- 1 small onion, chopped
- 1⁄2 tablespoon minced garlic
- 2 carrots, chopped
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon rosemary
- kosher salt
- cracked pepper
- 2 tablespoons butter
Directions
- In a large pot add 12 cups of water and 3 cups button mushrooms, boil on medium heat reduce to 2 cups stock.
- In butter saute onion,garlic,carrots and shiitake mushrooms,add thyme and rosemary,add rice saute 1 minute,add mushroom stock, and bay leaves.
- cover simmer very low about 1 hour salt and pepper to your taste.
