Ingredients
- 1 lb ground beef
- 1 (15 ounce) can light kidney beans
- 1 (15 ounce) can dark red kidney beans
- 1 (15 ounce) can navy beans
- 1 (15 ounce) can black beans
- 1 (28 ounce) can diced tomatoes
- 1 cup grape tomatoes, sliced in half
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1⁄4 cup spiced rum
- 2 tablespoons oil
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon thyme
- 1⁄2 teaspoon crushed red pepper flakes
- 1⁄2 teaspoon salt
- 1 teaspoon cumin
- 1⁄2 tablespoon chili powder
- 1⁄2 tablespoon cilantro
- 3 tablespoons lime juice
- 3⁄4 teaspoon garlic powder
Directions
- Brown ground beef and peppers in oil in a stockpot.
- Add garlic, rum, beans, tomatoes, and bring to boil.
- Add remaining ingredients, cover and cook on low for approximately 1 to 2 hours.
