Whole Wheat Bread

Yields: 2 loaves
Ingredients
- 2 1⁄4 teaspoons active dry yeast
- 2 cups lukewarm water (between 100-115 degrees)
- 1⁄4 cup butter, softened (I use Earth Balance Vegan Buttery Sticks)
- 1⁄8 cup molasses (I use Brer Rabbit Black Strap Molasses)
- 1⁄4 cup honey
- 1 teaspoon salt
- 2 1⁄2 cups whole wheat flour
- 1 1⁄2 cups unbleached all-purpose flour
- 1⁄2 cup flax seed meal
- 1⁄2 cup vital gluten
Directions
- Dissolve yeast in lukewarm water.
- Combine butter, molasses, honey, and salt in a large bowl. Mix well.
- Add yeast mixture. Stir. Slowly add flours, flax and vital gluten while mixing.
- Turn onto lightly floured surface and knead until smooth and elastic.
- Place in a lightly oiled bowl and let rise until doubled, about an hour.
- Punch down to remove most of the volume. Let rest a few minutes.
- Knead just to get dough back into a ball-shape and cut in half. Shape both halves into loaves and place in greased pans.
- Let rise one hour.
- Bake at 375 degrees for 35-40 minutes.
